Jackie Kennedy’s Waffle Recipe

In closing Waffle Week, continuing with All-American Breakfast Month, and in diving into election season, we thought it would be fitting to share Jackie Kennedy Onassis’ own waffle recipe.  Everyone deserves a filling breakfast, and these waffles will have you feeling as powerful as the president and as regal as Jackie O.

Jacqueline Kennedy’s Waffle Recipe


1/2 cup butter (1 stick)
1 tbsp. sugar
2 eggs, separated
1 cup + 1 tbsp. sifted cake flour
1 cup buttermilk
1 pinch salt
4 tsp. baking powder


Cream together the butter and sugar. Add the egg yolks, one at a time.  Mix until incorporated.  Add the flour and buttermilk. Stir in the salt.  Mix until all ingredients are incorporated and set aside.  In a separate bowl, whisk the egg whites until stiff.  Pour the whites into the batter, and then add in the baking powder.  Mix until fully incorporated.  It should be fluffy and thick.  Bake in a waffle maker and follow its instructions.  Serve immediately.
